Dutch oven cooking has been around since the late 1600's and continues to evolve into the 21st Century. The original dutch ovens were made of cast iron. They were loved by the early pioneers of dutch oven cooking for their durability and versatility. Not much has changed over the last 400 years. Eventually the outdoor cook saw the benefits of using the dutch oven indoors for more seasoned and flavorful foods. Because of the increased demand and the changes in stovetop technology, the need to modify the original dutch oven was necessary. You can now find cast iron cookware and dutch ovens coated with enamel to prevent damage to glass and smooth top stoves. Cast aluminum cookware is a newer development which mimics the qualities of their cast iron counterparts with the exception of a lighter weight.
